Good News Friday {#3}

It's Friday and here on this blog that means...
 I share some good news 
with you, my devoted readers!

Today, I am so excited to share that our town
 has two new residents!!

This is Matthew and Kinsey Olson.



Matthew grew up in Childress and graduated from Childress High School in 2008.  He played four years of college football and graduated from Hardin Simmons University.  He has two great parents, Richard & Julie Olson and two sisters, Brooke & Alison.  Matthew says that he is excited to be in Quanah and that he can't wait to see what The Lord has in store for them.

Kinsey is from Amarillo and has lived there for the past 23 years.  She went to high school at San Jacinto Christian and graduated in 2009.  She said that she has been playing volleyball since she could walk and that she was fortunate enough to play it for two years in college at Hardin Simmons University until she hurt her back (and met a crazy good looking guy named Matthew).  Kinsey has two wonderful parents, Pat & Kim and a beautiful sister, Katie.  Her and Matthew have a toy Australian Shepard named Burr! She says they are so excited to be in Quanah, TX!!

They are two new coaches here at QHS and 
we could not be happier to have them in Quanah! The kids are going to love them and learn so much from them.

The One with 100 Ways to Simplify Your Life (1-5)

Good morning...

If you follow my Facebook page then you know that I have been reading Joyce Meyer's "100 Ways to Simplify Your Life."

I am always looking for ways to simplify my life.  
Everything is so busy, busy, busy these days...I want to know how to make this life easier on myself and my family...I also want to know how to do that in a Godly way.

Today, I just wanted to share some notes I've made from #1-5...

1) Do One Thing at a Time

Oh my goodness...so far this has been the HARDEST one for me.
I have gotten in a terrible habit of multi-tasking like a crazy woman.  I will watch TV while I search not only my computer, but my phone as well.
I will try to pay bills, do something for work and help the kids with something.
I will wash dishes, do the laundry and talk on the phone.
So many times I get distracted and I feel like I hardly complete any task.  
I do so many things at once I don't feel like I ever give any task 100%.

Over the past few days I have been trying to focus ON ONE THING AT A TIME.
Whew...it's tough...but getting easier!

In the book:

"The apostle Paul tells us in Philippians 4:6 to be anxious for nothing.  Anxious people are always trying to live ahead of where they currently are.  They spend today trying to figure out tomorrow and the result is the loss of simplicity."
Practice living one day at a time; give yourself - your thoughts, your conversation, your energies, every part of you - to the day at hand."
"Develop an ability to give yourself to what you are doing.  You will sense an awareness enabling you to enjoy the current activity, instead of going through each day in a blur of activity and confusing thought which leave you drained and exhausted."
"Do you fear you will not accomplish as much if you try to live this way? It's true you may not do as much, but you will also enjoy what you do a whole lot more."

Wow.  That last line was soooo eye opening for me.  I may not accomplish as much...but that's ok!!

2) Be Satisfied with What You Have

This is one that I am familiar with.  I learned a while back...that if I can't appreciate what God has already given me...why would He give me any more?

I also think....at times....that I have way too much stuff in my life and I feel it complicates our lives and makes me feel stressed.

In the book:

"Does "more" have the ability to make us happy as the world wants us to believe? The answer is No! In fact, the more we have, the more work we must do to take care of it.
"There's nothing wrong with having things, but it is wrong to lust after them.  When we feel we cannot be happy without something, we are lusting after it."
"Make a decision to begin thoroughly enjoying what you have.  Thank God for it and be content."

3) Keep God First

I try to do this...but just like everyone else...at times I think I know best...and I try to control things in my life.  
I enjoy blessing others and showing them that they are loved, but somethings I get selfish and forget to always think of others instead of myself.
I want to keep God first and bless others more!

In the book:

"Money can divert our attention away from God and His will, but it doesn't have to.  We should not be afraid of abundance; instead, we should learn how to handle it properly.  If we maintain a proper attitude toward money and material things, they can be used to bless people."
"We can enjoy abundance without it pulling us away from God or causing us to be greedy.  We can be prosperous and still keep God first in our lives."
"Money is only a problem is we hoard it.  The Bible never says money is a problem; it does say the love of money is a problem.  Learn to be a channel, not a reservoir.  Let things flow to you and through you."

4) Live to Glorify God

I want to see God in my work, my chores at home...everywhere!
How simple is that...sometimes I overlook the small things that God has His hand in....

In the book:

"Start seeing ordinary daily routines as something done for God, not something to check off your list so you can search for God amidst things you think are holy."
"God assigns us the ordinary things of life as well as spiritual things like prayer, Bible study and good works."
"What makes life simple is having an intimate relationship with Christ..."
"Start removing those parts of your life you keep around only for yourself so you will have more room for the parts that glorify and honor God."

Wow....that last one wrecked my heart...because I am so guilty of filling up my life with only things that are just for me!! Life is so much more...than just about me.

5) Don't Worry about Tomorrow

In the book:

"Any concern too small to be turned into a prayer is too small to be made into a burden."
 - Corrie Ten Boom

How true is that quote?

"Our heavenly Father does not give us an extra supply of grace to think on tomorrow's problems and still maintain our peace of mind and joy."
"Trying to live tomorrow today complicates life."
"Don't fear the future, because what you need to deal with tomorrow can only come with tomorrow."
"Put your trust in God and allow yourself to enjoy the simple life."


This book...has been so encouraging so far!!
I can't wait to read the rest of these ways 
that will help me simplify my life!!

What I Wish I Wore Wednesday {#8}

It finally happened.
I went a whole week and did not take one outfit picture.

Sooooo instead I am sharing what I wish I would've worn this past week....
that sounds way more fun anyway.

...and I admit...this post took me way longer than it should have...
I was super picky about my wishful outfits...it was an outfit for someone way taller than me or the skirt would be way too long or short...or I loved the outfit, but hated the shoes....and finally I was like c'mon...just pick something....it's almost midnight :)

Still...it was fun.

The One with the Erin Condren 2014/2015 Life Planner

For my fellow Erin Condren Life Planner lovers ----

Lots of changes to the new 2014/2015 Life Planner...

Since our New Year's Eve is July 31st (for more on that read here) ... I will be ordering a new one for myself in the very near future and I can't wait!!!

I'm a nerdy calendar, to do list, planner girl (& proud of it) and I have purchased lots and lots of planners in my lifetime...but this has been my absolute favorite!

The One with the Friends

What would we do without our girlfriends?

I am very open, but very private at the same time.  I am nice to everyone, but there are few women that I open my heart up to.  It takes me forever to build friendships because I am a little shy and guarded, but once they are built I am loyal forever.

As I think back over the course of my life and all of the friends I have had....it's interesting to see how these girls were my Rock at different times.  All of them were special to me and I poured my life into theirs.
It's also interesting to think about how the chapters with some of these friends have come to an end, but I still cherish our friendship and the wonderful times that we shared.  Some of the friendships are there...but just a little different.

There aren't many things that are more fun than sharing a cup of coffee with your BFF or laughing at all of your inside jokes.  Through the good times and the bad times you always want what is best for each other.

Talking to your best friend is sometimes all the therapy you need.

One of my closest friends had said once that ------> Nothing ever stays the same.
How true is that? Life is constantly changing...sometimes we change jobs or move, get married and sometimes divorced, we have babies or just lose touch... No matter how badly you want to remain close to some of these friends...life takes you in another direction.
Even though you don't get to spend as much time together....for me... my heart doesn't change.
I still love each of one of my Best Friends and I always will.




They 
always stood by me.  always encouraged me. 
 always laughed with me. 
 always saw the best in me no matter what....

I believe each of our friendships serve a purpose.  They help us grow and enrich our lives.  Those friendships are exactly what we need at that moment in our lives.

This post is dedicated to all of those friendships...the ones from our past, the ones we have yet to make and to the ones that are constantly changing 
throughout the years.

The One with the Summer Recipes - Link Party

I am going to share two recipes with you that have my favorite fruit in them - Strawberries! 
Aren't they just delicious?

The first recipe I found over at The Cookie Rookie and it looks soooo good.  
The perfect dessert for a summer get together!!





Strawberry Shortcake Trifle Cups
by The Cookie Rookie

Ingredients
  • 2 loaves Sara Lee Pound Cake, cubed
  • 8 oz container of Cool Whip
  • 6 oz low fat cream cheese
  • 1 ½ cups powdered sugar
  • 4 oz white chocolate, melted
  • 4 oz white chocolate, cut into small pieces
  • 1 t vanilla extract, or 1 ½ t vanilla bean paste
  • 2 pints fresh strawberries, washed and sliced into small pieces
  • 4 oz sugar free strawberry glaze
  • 2 oz heavy cream
  • ⅓ cup sugar


Instructions
  1. For the filling:
  2. Beat cream cheese until light and smooth.
  3. Add powdered sugar, melted chocolate, and vanilla.
  4. Fold in Cool Whip and set aside.
  5. For the Strawberry glaze mixture:
  6. Macerate the strawberries by adding sugar, stirring, and letting sit for at least 3-4 minutes.
  7. Add strawberry glaze and mix together fully.
  8. Set aside.
  9. For the ganache:
  10. Heat heavy cream in small saucepan until hot and bubbly.
  11. Remove from heat and pour over chopped white chocolate, stirring until chocolate is completely melted.
  12. Allow to cool, stirring occasionally. Make sure it is cooled to room temperature before proceeding. If the mixture is too hot it will soak into the cake layer.
  13. To assemble the trifles:
  14. Place a large spoonful of filling into the bottom of a cup
  15. Using a slotted spoon, top with a large spoonful of the strawberry glaze mixture
  16. Dip 6-8 cubes of shortcake into the ganache and place on top of the strawberries. The ganache will help the cake to not get too soggy from the glaze mixture
  17. Top with another large spoonful of the filling
  18. Finish the trifle with another heaping spoonful of the strawberry glaze mixture.
  19. Repeat with remaining cups.
  20. Makes about 6 individual cups
  21. Enjoy!

My second recipe is one that my family would enjoy at a lot of our own get togethers.  
When my aunt and uncle had a very special birthday dinner for my 18th Birthday...this is the dessert I requested.  16 years ago and still loving it!

This recipe is super easy to make!



Strawberry Pretzel Salad

Ingredients

  • 2 1/2 cups pretzels (crushed fine)
  • 3 tbsp brown sugar
  • 3/4 cup butter
  • 1 (6 oz.) package strawberry jello
  • 1 (10 oz.) package frozen strawberries or 16 oz. sliced fresh strawberries
  • 1 (8 oz.) package cream cheese
  • 1 cup sugar
  • 8 ounces cool whip



Instructions


  1. 1.  Combine pretzels, brown sugar, and melted butter and press into a greased 9 X 13 pan. You can use more butter if the crust isn't sticking together and make the pretzels more crushed than I did. Bake @ 350 for 10 minutes.
  2. 2.  Make jello according to directions and add the strawberries. Refrigerate until partially set. *If it is not set enough it will leak through your cream cheese layer and make your pretzels soggy.
  3. 3.  Beat cream cheese and sugar until smooth. Blend in cool whip. Spread over cooled crust make sure you spread completely to the edges to create a seal so your jello doesn't leak through. Pour jello over cream cheese layer. Refrigerate.
