Sopapilla Cheesecake

Ingredients:

3 cans of pillsbury butter crescent rolls
2 (8 oz.) packages of cream cheese (softened)
1 cup of sugar
1 teaspoon vanilla extract
1/4 cup butter (melted)
cinnamon & sugar

Directions:

1.  Unroll and spread 1 & 1/2 can crescent rolls on bottom of a 9x13 pan.
2.  Combine softened cream cheese, sugar and vanilla extract.
3.  Spread cream cheese mixture over crescent rolls.
4.  Unroll and spread the remaining crescent rolls over the mixture.
5.  Spread melted butter over the mixture.
6.  Sprinkle with cinnamon & sugar.
7.  Bake at 350 degrees for 20-30 minutes.

*Tips: It is very important to soften the cream cheese.  If you are short on time, cut the cheese up into four pieces in a microwavable bowl.  Heat for 20 seconds or until it is softened.

I hope despite that it is Monday...you will find joy in the small things!
